If you follow me on Instagram, you know that recently my mom bought me Chrissy Teigen's new cookbook "Cravings". Filled to capacity with inspiring delicacies, I made it a New Year resolution to cook at least one recipe, per week. I made this resolution in the hopes of relaxing more and, hopefully, honing my cooking skills and palette.
The first recipe of my resolution is this DELICIOUS spaghetti cacio e pepe. Arriving at this dish was a no brainier once I realized the total cook time would be 25 minutes. It contained my favorite ingredients, bacon and parmigiano reggiano, and ingredients could be cooked simultaneously in the same pan- minus the noodles. It's a classic case of dump-and-cook, which fares perfectly when meal prepping.
Rating: 7/10. I think next time I'll use pancetta in lieu of bacon. The recipe allowed for bacon but I think bacon is taking the easy way out and because of that flavor may have been stripped from this dish- not that it's easily recognizable. Nonetheless, it shall accompany me to to work tomorrow.
